Cocoa Coconut Date Balls
(only 3 ingredients)!

About the Dish:
I used to make nut date balls all the time when I ate paleo, and I really did miss them! I love dates and chocolatey snacks, so I decided you can still make date balls without the nuts :) However if you do eat nuts, these are delicious with walnuts, pecans, and peanuts as well!

This is the cocoa powder that I prefer! I like that they are conscious of low heavy metals (found in all cocoa). It also tastes RICH and delicious!

Equipment:
Ingredients:
16oz organic medjool dates (pits removed)
1/4 C cocoa powder
1 C shredded coconut (no sugar added)
Pinch of salt (optional but highly recommended)
Steps:
Remove all of the pits from your dates if they are pitted (you can see a visual of this on my instagram video or in the picture above)
Place all of your ingredients into your food processor
Blend on low for 30 seconds or until everything clumps together and slows the food processor significantly (see video)
Turn off food processor and remove the blade
Take Tbsp. portions of the date mixture and start rolling balls with your hands, they can be any size you like!
Store in the fridge or freezer for longer storage.

Changes/Substitutions
There are SO many variations and flavors that you can try with date balls.
Add: walnuts, pecans, peanuts, peanut butter, dehydrated fruit (strawberries would be very good).
You can also add more of less cocoa powder and shredded coconut depending on your preference!
The options truly are endless, it will just change the flavor and texture depending on what you decide to do. Let me know if you try any amazing combos!
